School lunch day 4 of 5. Did you know that cooking and freezing meat is an option? Everyone is hooked on poop deli meat full of sugars and mysteries we dare not question. Here’s one way I bulk prepare and freeze for school lunches.
Nobody likes white meat in this house so our whole, roasted birds inevitably need a solution for the breast meat. I do a few different things, but here’s one. I slice the breast meat in strips, give them an egg wash, then roll them in a combo of raw Parmesan (grated), homemade bacon crumbs, and some spices. I roast them up until cooked, cool, and put them in the freezer. It’s so easy it’s silly. You can do this however and with whatever you want. Just a nice little thing to have when your teenager says “there’s nothing to put in my lunch”.
Lunch today was the aforementioned strips using one of our organic, heritage turkey breasts, homemade dip, organic olives and some pepper, and a coconut flour cookie made with some gelatin for chew.
