Food on the go. Solely grass fed ground beef patty cooked in tallow and topped with guanciale, wild cold water Atlantic dulse, White Tail deer bone broth, and a crispy, sumptuous pig ear.
I contend that anyone who says they don’t like pig ears either won’t try them or they had them cooked poorly. Because these babies are seriously delicious comfort food.
I use the bitters and gallbladder tinctures after a longer fast, before eating. It’s a little “wake up” to my digestive system that works well for me. I’m coming off a 67 hour fast now. I just squirt them in water about fifteen minutes before my first meal. I have used different bitters and tinctures and routinely mix them up. There’s nothing special about these ones, just what I’m using today.
I took some pictures of how to cook pig ears because it’s pretty tricky. I’ll post those in the next couple of days in an attempt to convert the naysayers to a beautiful, sublime little piece of palate paradise. Doesn’t hurt that they’re loaded with collagen either.
