We keep some turkeys back every year for eggs because turkey eggs are the best eggs there are. Next in line, I’d pick our goose eggs, then duck eggs. Pullet eggs are next, then, finally mature hen eggs.
Young hens, or pullets, lay small eggs with so much more vibrancy and vitality, nutrition and taste far exceeding those of used up old lady birds. Look for those small eggs laid by young birds instead of the jumbo older hen eggs that cost more because they’re bigger but, contrary to our obsession with size, bigger is not better in this case.
There’s a myriad of factors that go into our epidemic of food intolerances and allergies, way too much for a simple IG post, but the fact is that the main allergens: dairy, peanuts, eggs, gluten etc. coincidentally tie in with our abuse of these beautiful foods.
We raise the animals improperly, feeding them improperly, pasteurization to make dynamic foods dead, constant access to one type of egg (or broccoli or banana or pig etc.), dropping seasonality of access and consumption, refining the shit out of these foods to make them shelf stable and more palatable and then piggybacking them onto other highly inflammatory foods like sugars and vegetable oils resulting in our bodies sending out a four alarm fire warning every time it sees these foods again. It’s just a hot mess in the commodity food world.
According to a couple of people that contacted me yesterday, I’m back to being shadow banned by IG again.
