A wee sprinkle of encapsulated sunshine on my plate. Here are those aforementioned salted, preserved egg yolks on my lamb shanks. They are, quite literally, a beautiful, translucent jewel of deep nutrition provided by creatures living as nature says they should.
It’s a one meal kind of day. I have a zillion and one things to do and making another meal just isn’t going to happen today. I put these lamb shanks into the slow cooker last night, the braunschweiger was pulled from the freezer this morning, and the cold duck meat was one of a few breasts that I cooked earlier in the week. The bone broth is goat and absolutely sublime.
